🥘 Cuisine
Armenian cuisine is fresh, aromatic, and deeply soulful — shaped by centuries of tradition and the bounty of the Caucasus highlands. Lavash, the paper-thin flatbread baked in underground tonir ovens, is UNESCO-recognized intangible heritage and appears at nearly every meal, used as plate, utensil, and food all at once.
Try harissa (a hearty wheat and chicken porridge) and manti (dumplings in garlic yogurt) beyond the recipes below. Finish with gata (sweet layered bread) and strong Armenian coffee, served in a small cup you're expected to linger over.
Khorovats
Armenian Barbecue
Marinated meat skewers grilled over charcoal — the pride of Armenian cuisine, and always a man's job at any gathering.
Ingredients: 300g pork or lamb, cubed · 1 onion, grated · 30ml olive oil · salt, pepper · tomatoes and peppers for grilling · lavash bread · fresh herbs
Preparation: marinate meat in grated onion and oil overnight. Thread onto skewers with vegetables. Grill over hot coals, turning often, to desired doneness. Serve on lavash with herbs, and a squeeze of lemon over the meat.
💡 Grated onion tenderizes the meat — don't skip the overnight marinade.
Dolma
Stuffed Grape Leaves
Grape leaves stuffed with rice, herbs, and often meat — a dish that comes in dozens of regional and family variations, each one someone's grandmother's "correct" version.
Ingredients: 30–40 grape leaves (jarred or fresh, blanched) · 250g ground lamb or beef (optional) · 150g rice · 1 onion, finely diced · fresh mint, dill, parsley · salt, pepper, allspice
Preparation: mix rice, meat (if using), onion, herbs, and spices. Place a spoonful at the base of each leaf, fold in the sides, and roll tightly. Layer in a pot, cover with water, weigh down with a plate, and simmer 45 minutes.
💡 Line the pot with a few spare leaves first — it stops the dolma from catching on the bottom.
Imam Bayildi
Stuffed Eggplant
Baked eggplant stuffed with tomatoes, onions, and peppers — a dish shared, with local variations, across the wider Caucasus and Levant.
Ingredients: 2 small eggplants · 2 tomatoes, diced · 1 onion, sliced · 1 pepper, diced · 4 cloves garlic · olive oil · parsley
Preparation: halve eggplants and score the flesh, salt and rest 30 minutes, then pat dry. Sauté onion, pepper, tomato, and garlic. Fill the eggplants with the mixture, drizzle with oil, add a splash of water, and bake at 180°C (356°F) for 45 minutes.
💡 The name means "the imam fainted" — from delight, or from the cost of the olive oil, depending who tells it.
Lahmajoun
Armenian "Pizza"
Thin, crispy flatbread topped with spiced minced meat — cheap, fast street food that's just as at home as a light lunch.
Ingredients: 240ml flour, water, salt for dough · 150g ground lamb · 1 tomato, grated · 1 onion, grated · parsley, mint · paprika, cumin, allspice · lemon
Preparation: make a thin dough and rest 30 minutes. Mix meat with tomato, onion, herbs, and spices. Roll the dough paper-thin, spread a thin layer of the meat mixture, and bake at 250°C (482°F) for 8–10 minutes. Squeeze lemon over, roll up, and eat.
💡 The dough should be almost transparent when rolled — thinner than you think.
