Vincentian cooking joins the volcanic main island’s produce with fish and shellfish from the Grenadines. Callaloo, coconut and crab

Callaloo is a family of Caribbean preparations, not one universal formula. In Saint Vincent and the Grenadines, dasheen leaves can be simmered with coconut milk, okra, aromatics and seafood. Raw or undercooked dasheen leaves can irritate because of calcium oxalate; use a trusted local recipe and cook them thoroughly.
Eating responsibly
Ask what is local and seasonal, especially after storms that disrupt agriculture and shipping. Small restaurants, bakeries and market stalls keep more spending in local communities than imported resort packages. Reef fish and lobster may be subject to seasons or conservation rules; follow local guidance.
