🍽️ Cuisine

Aruban cuisine reflects the island's multicultural heritage — Dutch colonial influences, Latin American neighbors, international imports, and indigenous Caribbean traditions combine into a distinctive culinary identity. Over 90 nationalities are represented in Aruba's restaurants, making this tiny island a surprisingly diverse dining destination.

Beyond the recipes below: pastechis — deep-fried turnovers filled with meat, cheese, or fish, the island's favorite snack. Funchi — cornmeal polenta similar to Italian polenta, served alongside stews. Seafood: fresh mahi-mahi, wahoo, red snapper, and Caribbean lobster feature on menus island-wide; pisca hasa (fried fish) appears everywhere, with the daily catch determining what's actually available — ask your server what's fresh.

Stuffed Cheese — The National Dish

Keshi Yena

A whole cheese wheel stuffed with spiced chicken or beef — Aruba's showstopper, originally created to make use of the rinds left over from imported Gouda and Edam.

Ingredients: 1 whole Gouda or Edam cheese wheel (hollowed) · 500g ground beef or shredded chicken · 1 onion, diced · 2 tomatoes, chopped · olives, capers, raisins · hot pepper sauce to taste

Preparation: hollow out the cheese, reserving the pieces. Brown the meat with onion and tomato, then stir in olives, capers, raisins, and spices, along with the reserved cheese pieces. Stuff the mixture into the cheese shell and bake at 180°C (350°F) until melted through, about 30 minutes.

💡 Traditionally made in a hollowed whole Edam wheel, wax coating and all — the wax shell is decorative, not edible.

Cornmeal Pancakes

Pan Bati

Slightly sweet cornmeal pancakes — Aruba's daily bread, served alongside almost anything.

Ingredients: 240ml cornmeal · 120ml flour · 240ml milk · 1 egg · 30ml sugar · 5ml baking powder · butter for frying

Preparation: mix the dry ingredients, then add milk and egg and whisk smooth. Rest the batter 10 minutes. Cook on a buttered griddle, flipping when bubbles form. Serve warm with stews or as breakfast.

💡 The batter should be thick — add a little more milk if it seems too stiff to pour.

Fish Soup

Sopi di Piska

Hearty Caribbean fish soup with coconut and local vegetables — comfort food after a day of sun and salt water.

Ingredients: 300g white fish, cubed · 240ml coconut milk · 1 potato, cubed · 1 tomato, diced · 1 onion · lime juice · cilantro · scotch bonnet pepper

Preparation: sauté onion, add tomato, then potato and 480ml water; simmer until the potato is tender. Add coconut milk and fish, and cook 10 minutes until the fish flakes. Finish with lime juice and cilantro.

💡 Don't stir too vigorously once the fish goes in, or it will break apart before it's served.
